Kombucha is a lightly-carbonated, fermented tea that's quite delicious once your tastebuds become accustomed to it! Lots of people think kombucha has an odd-vinegary flavour the first time they try it, but many eventually come to love it. Even if you don't LOVE the taste of this bevy, it's worth drinking for its health benefits! In fact, it was called the “Immortal Health Elixir” in ancient China.
Researchers from the University of Latvia found that: [kombucha] can efficiently aid in health preservation and recovery due to its four main properties: detoxification, anti-oxidation, energizing potencies, and promotion of healthy immune system (Journal of Medicinal Food, 2014).
Kombucha is made fermenting a sweetened tea with a colony of bacteria and yeast called a SCOBY. The SCOBY is often called the “mother” because of its ability to reproduce. In digesting the sugar of the tea, it produces a range of organic compounds (i.e. acetic acid, lactic acid, glucuronic acid, glucosamines, B vitamins and vitamin C). The final product is a natural probiotic, rich in antioxidants and detoxifying compounds.
Digestion: Kombucha contains many beneficial bacteria that help to promote a healthy balance in gut flora. This improves digestion and promotes mood stability and mental clarity.
Detoxification: Glucuronic acid in kombucha is a potent detoxifier that binds to toxins to be excreted by your liver
Immunity: Kombucha is a rich source of antioxidants. Antioxidants will boost your immune system and aid in detoxification
Energy: Iron in the kombucha, released during the fermentation process, improves oxygen supply to tissues and stimulates energy (ATP) production at the cellular level.
Joints + Aging: Glucosamines prevent and treat arthritis and reduces wrinkles through an increase in hyaluronic acid (which supports preservation of collagen).
